Below are some ideas off the top of my head that would be great vegan breakfasts. Check back often to see the list grow as I add more and as people join, comment, and share. Please SHARE if you have recipes that you enjoy :-)
- Bowl of Fiber rich cereal w/ fresh fruit and Almond Milk
- Fruit and vegetable smoothie blended in a high quality blender with water and/or almond milk
- Sample Recipe:
- Handful of raw cashews (or cashew pieces)
- tsp of spirulina (blue-green algae)
- 3 Tbsp of organic shelled hemp seeds and/or chia seeds
- 1 cup kale
- 1 cup spinach
- 1/2 frozen banana
- 5 frozen strawberries or mango chunks
- 1/3 cup frozen blueberries
- 2 medium carrots (with skins)
- 2 celery stalks (diced or chunked)
- 1 medium apple
- Fill the blender after adding all ingredients to 3/4 full of liquid (either all water or water & almond milk)
- Blend until smooth and enjoy throughout the day (keep refrigerated and/or serve chilled over ice)
- Whole Oats Oatmeal (organic) w/ nuts n berries
- Pour dry oats into a bowl and add
- 1/2 tsp Earth Balance vegan butter
- 1 Tbsp organic agave nectar
- 1/2 cup chopped raw almonds and raw walnuts
- Boil water and pour over oatmeal (until the water level is barely half the size of your pile of oats) then cover for 3-5 minutes
- Add fresh fruit, cinnamon, and a little almond milk and ENJOY!
