Vegan Breakfast Ideas

Below are some ideas off the top of my head that would be great vegan breakfasts. Check back often to see the list grow as I add more and as people join, comment, and share. Please SHARE if you have recipes that you enjoy :-)

  • Bowl of Fiber rich cereal w/ fresh fruit and Almond Milk

  • Fruit and vegetable smoothie blended in a high quality blender with water and/or almond milk
    • Sample Recipe:
      • Handful of raw cashews (or cashew pieces)
      • tsp of spirulina (blue-green algae)
      • 3 Tbsp of organic shelled hemp seeds and/or chia seeds
      • 1 cup kale
      • 1 cup spinach
      • 1/2 frozen banana
      • 5 frozen strawberries or mango chunks
      • 1/3 cup frozen blueberries
      • 2 medium carrots (with skins)
      • 2 celery stalks (diced or chunked)
      • 1 medium apple
      • Fill the blender after adding all ingredients to 3/4 full of liquid (either all water or water & almond milk)
      • Blend until smooth and enjoy throughout the day (keep refrigerated and/or serve chilled over ice)

  • Whole Oats Oatmeal (organic) w/ nuts n berries
    • Pour dry oats into a bowl and add
      • 1/2 tsp Earth Balance vegan butter
      • 1 Tbsp organic agave nectar
      • 1/2 cup chopped raw almonds and raw walnuts
    • Boil water and pour over oatmeal (until the water level is barely half the size of your pile of oats) then cover for 3-5 minutes
    • Add fresh fruit, cinnamon, and a little almond milk and ENJOY!
